Shannon currently employs over 30 staff ranging from Bar Staff, Entertainment Staff, Kitchen Hands to our specialty Chefs. This is a blend of previous Somni staff, staff previously employed by the Tavern and young, energetic local juniors who are looking to enter the Hospitality industry.

Shannon has set up an amazing facility above the Coomera Waters Tavern and has become the face of Coomera Waters Village since taking over both Shannon’s Restaurant and the Tavern. Shannon and his staff bring to both venues their skills learned from a range of large and small venues and have developed an extensive knowledge in the catering and entertainment industries over many years.

Shannon also brings his talents and experience in modern Australian Cuisine from his background in the art of degustation menus and innovative Daily Specials. The Sous Chef, Beau, has been with the Tavern and Restaurant since it opened and has a passion unmatched in the venue and his local knowledge of produce and clientele is invaluable.

The Chefs are both experienced Chefs previously working for the Tavern and at Somni. They are both major assets with their flair for cooking and learning. They also bring new ideas to the kitchen with their former training in the UK in Michelin Star restaurants.
